Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Pour in vegetable broth and diced tomatoes.
- Bring to a boil, then reduce heat.
- Add tortellini and cook until tender.
- Stir in fresh basil, salt, and pepper.
- Serve hot.
Notes
- For a richer flavor, add Parmesan cheese on top.
- You can use frozen tortellini if fresh is unavailable.
