- 1 lb ground beef
- 1 cup cooked rice
- 1 can black beans, drained
- 1 cup shredded cheese
- 4 large flour tortillas
- 2 cups enchilada sauce
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook ground beef over medium heat until browned.
- Add rice, black beans, cumin, garlic powder, salt, and pepper to the beef.
- Warm tortillas in the microwave for 30 seconds.
- Spoon beef mixture onto each tortilla and roll tightly.
- Place rolled burritos in a baking dish.
- Pour enchilada sauce over the burritos.
- Sprinkle cheese on top.
- Bake for 20 minutes or until cheese is melted.
Notes
- Serve with sour cream and salsa.
- Can substitute chicken for beef.
- Add jalapenos for extra spice.
