- 6 medium potatoes, peeled and diced
- 1 medium onion, chopped
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1/2 cup sour cream
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Add diced potatoes and chopped onion to the slow cooker.
- Pour in chicken broth and season with salt and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, mash some of the potatoes for a thicker texture.
- Stir in shredded cheese, milk, and sour cream until melted and combined.
- Serve hot and garnish with green onions.

- Use your favorite cheese for variation.
- Adjust thickness by adding more or less milk.
- Store leftovers in the refrigerator for up to 3 days.
