- 2 lbs beef chuck roast
- 4 tablespoons garlic butter
- 1 lb baby potatoes
- 1 onion, chopped
- 2 cups beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
Instructions
- Season the beef with salt and pepper.
- Heat garlic butter in the slow cooker.
- Sear the beef on all sides until browned.
- Remove the beef and set aside.
- Add onions and potatoes to the slow cooker.
- Place the beef on top of the vegetables.
- Pour in the beef broth and sprinkle thyme.
- Cover and cook on low for 8 hours.

- Adjust seasoning as desired.
- Serve with fresh herbs for garnish.
