Ingredients

- 1 pound shrimp, peeled and deveined
- 1 pound smoked sausage, sliced
- 2 cups long-grain rice
- 4 cups chicken broth
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sausage and cook until browned.
- Add onion, bell pepper, and celery. Sauté until soft.
- Add garlic and Cajun seasoning. Stir for 1 minute.
- Add rice and stir to coat in oil.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Stir in shrimp and cook until pink.
- Season with salt and pepper. Serve hot.
Notes
- For extra flavor, add chopped green onions before serving.
- Adjust seasoning to your taste.
- You can substitute the shrimp with chicken if desired.
