- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups turkey broth
- 2 cups cooked turkey, shredded
- 1 cup potatoes, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups green beans, trimmed and chopped
- 1 cup corn, frozen or fresh
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Add garlic and cook for another minute.
- Pour in turkey broth and bring to a boil.
- Add potatoes, thyme, rosemary, salt, and pepper.
- Reduce heat and simmer for 15 minutes.
- Stir in turkey, green beans, and corn.
- Simmer for an additional 10 minutes.
- Adjust seasonings as needed and serve hot.
Notes
- Use leftover turkey for convenience.
- Feel free to add other vegetables.
- This soup freezes well.
