Ingredients

- 1 pound chicken sausage
- 1 can (15 oz) white beans, drained and rinsed
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups spinach
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion, carrots, and celery. Sauté until softened.
- Add minced garlic and cook for 1 minute.
- Remove sausage from casings and add to the pot. Cook until browned.
- Add chicken broth, diced tomatoes, white beans, and Italian seasoning. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Stir in spinach and cook until wilted.
- Season with salt and pepper to taste.
Notes
- Serve with crusty bread.
- Store leftovers in the refrigerator for up to 3 days.
