  • 1 pound ground turkey
  • 1 cup black beans, rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Black pepper to taste
  • 1 avocado, diced
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce sweet potatoes with a fork.
  3. Bake sweet potatoes for 45-60 minutes until tender.
  4. In a skillet, cook ground turkey over medium heat until browned.
  5. Add black beans, corn, cumin, chili powder, salt, and pepper to the turkey.
  6. Cook for another 5-7 minutes, stirring occasionally.
  7. Remove sweet potatoes from the oven and cut them open.
  8. Stuff the sweet potatoes with the turkey mixture.
  9. Top with diced avocado and cilantro.
