- 2 large sweet potatoes
- 1 pound ground turkey
- 1 cup black beans, rinsed
- 1 cup corn
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- Black pepper to taste
- 1 avocado, diced
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce sweet potatoes with a fork.
- Bake sweet potatoes for 45-60 minutes until tender.
- In a skillet, cook ground turkey over medium heat until browned.
- Add black beans, corn, cumin, chili powder, salt, and pepper to the turkey.
- Cook for another 5-7 minutes, stirring occasionally.
- Remove sweet potatoes from the oven and cut them open.
- Stuff the sweet potatoes with the turkey mixture.
- Top with diced avocado and cilantro.
