Ingredients

- 1 lb fresh spinach, washed and chopped
- 1 cup feta cheese, crumbled
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 eggs, beaten
- 1/4 cup fresh dill, chopped
- 1/4 cup olive oil
- 8 sheets phyllo pastry
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a pan, heat olive oil and sauté onions and garlic until soft.
- Add spinach and cook until wilted. Remove from heat and let cool.
- In a bowl, mix spinach, feta, eggs, dill, salt, and pepper.
- Lay one sheet of phyllo pastry on a baking dish, brush with olive oil, and layer another sheet on top.
- Spread the spinach mixture evenly over the pastry.
- Fold the edges of the phyllo over the filling and layer more phyllo on top, brushing with oil between layers.
- Bake for 30-35 minutes until golden brown.
- Let cool slightly before slicing and serving.
Notes
- Use fresh spinach for the best flavor.
- Phyllo pastry can be delicate, handle it gently.
