Ingredients

  • 1 lb fresh spinach, washed and chopped
  • 1 cup feta cheese, crumbled
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • 8 sheets phyllo pastry
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, heat olive oil and sauté onions and garlic until soft.
  3. Add spinach and cook until wilted. Remove from heat and let cool.
  4. In a bowl, mix spinach, feta, eggs, dill, salt, and pepper.
  5. Lay one sheet of phyllo pastry on a baking dish, brush with olive oil, and layer another sheet on top.
  6. Spread the spinach mixture evenly over the pastry.
  7. Fold the edges of the phyllo over the filling and layer more phyllo on top, brushing with oil between layers.
  8. Bake for 30-35 minutes until golden brown.
  9. Let cool slightly before slicing and serving.
