- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs

- 1/2 teaspoon paprika
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix flour, salt, pepper, garlic powder, and paprika.
- In another bowl, beat the eggs.
- In a third bowl, combine shredded coconut and panko breadcrumbs.
- Dip each shrimp in the flour mixture, then in the egg, and finally coat with the coconut mixture.
- Place the shrimp in a single layer in the air fryer basket.
- Cook for 8-10 minutes, flipping halfway through until golden brown.
- Serve immediately with your favorite dipping sauce.

- Adjust the cooking time based on the size of the shrimp.
- For extra crunch, spray the shrimp lightly with cooking spray before air frying.
