- 8 oz penne pasta
- 1 lb Cajun sausage, sliced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes (14.5 oz)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Cajun seasoning
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the sliced Cajun sausage and cook until browned.
- Add onion, garlic, and bell pepper. Sauté until softened.
- Stir in the diced tomatoes, chicken broth, and Cajun seasoning.
- Add the penne pasta and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until pasta is cooked.
- Stir in the heavy cream. Cook for an additional 2-3 minutes.
- Season with salt and pepper. Garnish with parsley before serving.

- This dish can be made with any type of sausage.
- Adjust the Cajun seasoning to your spice preference.
