- 2 cups pinto beans
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup barbecue sauce
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Soak the pinto beans overnight and drain.
- In a pot, cook ground beef over medium heat until browned.
- Add onion and garlic, cooking until soft.
- Add soaked beans, diced tomatoes, barbecue sauce, chili powder, cumin, salt, and pepper.
- Add water to cover beans and bring to a boil.
- Reduce heat and simmer for 1.5 to 2 hours until beans are tender.
Notes
- Adjust spices to taste.
- Serve with cornbread or rice.
