- 4 cod fillets
- 2 red bell peppers
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup vegetable broth
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Roast the red bell peppers until charred, about 20 minutes.
- Peel and chop the roasted peppers.
- In a pan, heat olive oil and sauté onion and garlic until soft.
- Add chopped peppers and vegetable broth to the pan.
- Simmer for 10 minutes to blend flavors.
- Season with salt and pepper.
- Place cod fillets in a baking dish and pour the sauce over them.
- Bake for 15-20 minutes until the cod is cooked through.
