- 1 cup cooked chicken, shredded
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, drained
- 1/2 cup red bell pepper, diced
- 1/4 cup green onions, sliced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 8 eggroll wrappers
- Oil for frying
Instructions
- In a bowl, combine chicken, black beans, corn, red bell pepper, green onions, chili powder, cumin, and garlic powder.
- Place about 2 tablespoons of filling in the center of each eggroll wrapper.
- Fold the sides of the wrapper over the filling and roll tightly.
- Heat oil in a deep pan over medium heat.
- Fry the eggrolls until golden brown, about 3-4 minutes on each side.
- Remove and drain on paper towels.
Notes
- Serve with your favorite dipping sauce.
- You can bake the eggrolls at 375°F for 20 minutes for a healthier option.
- Customize the filling by adding cheese or jalapeños.
