Ingredients

- 1 cup calico beans
- 2 cups water
- 1/2 cup onion, chopped
- 1/2 cup bell pepper, chopped
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon mustard
- Salt and pepper to taste
Instructions
- Soak the calico beans overnight in water.
- Drain and rinse the beans.
- In a pot, add beans and water. Bring to a boil.
- Reduce heat and simmer for 1 hour until tender.
- Add onion, bell pepper, ketchup, brown sugar, mustard, salt, and pepper.
- Cook for another 30 minutes, stirring occasionally.
- Serve warm.

- Adjust seasoning to your preference.
- Beans can be cooked in a slow cooker for convenience.
